    non-fat plain goat milk or ewe milk yogurt cups

  • 1

    Soignon Spreadable goat cheese Pyramid Plain, 150g

  • 300 g

    mixed quinoa (red and white)

  • 3

    carrots

  • 200 g

    red cabbage, shredded

  • 50 g

    cashews

  • 1/2

    lemon

  • 1

    Granny Smith apple

  • 1

    sprig parsley

  • Salt and pepper

Steps in the recipe

  • Step 1

    Rinse the quinoa. Bring a pan of water to a boil, add salt, and cook the quinoa for 10 minutes (check the cook time on the packet). Drain and leave to cool.

  • Step 2

    Peel the carrot and cut into thin strips using a vegetable peeler. Quarter the apple, remove the core and cut into thin slices.

  • Step 3

    Roll up the carrot strips and arrange them in shallow bowls with the quinoa, red cabbage, and apple slices.

  • Step 4

    Chop the cashews and the parsley and sprinkle them over the top.

  • Step 5

    Season the vegetables with salt and pepper and squeeze a few drops of lemon juice over the dish. Mix the goat milk or ewe milk yogurt with 4 tbsp Soignon Spreadable goat cheese Pyramid Plain, 150g to accompany the salad bowl.
