    beet

    small sweet potato

    falafel

  • 75 g

    quinoa

  • 1

    pack Soignon Breaded Cheeses 4x25g

  • 2

    Little Gem lettuces

  • 3 càs

    warm water

  • 1 càs

    unsweetened cashew paste

  • 1 càs

    lemon juice

  • Olive oil

Steps in the recipe

  • Step 1

    Peel the beet and sweet potato and cut them into sticks.

  • Step 2

    Place them on a baking tray lined with parchment paper.

  • Step 3

    Drizzle with oil and season to taste.

  • Step 4

    Preheat your oven to 190°C and roast them for 20 minutes.

  • Step 5

    While they are in the oven, cook the quinoa according to the instructions on the packet.

  • Step 6

    Heat the falafel.

  • Step 7

    Chop or tear the lettuce.

  • Step 8

    Mix together the cashew paste, lemon juice, and warm water.

  • Step 9

    Cook the Breaded cheeses according to the instructions on the packet until they are golden.

  • Step 10

    Dish the quinoa into the center of the serving bowls.

  • Step 11

    Add the falafel, vegetables, lettuce, and breaded goat cheese around the quinoa.

  • Step 12

    Drizzle with vinaigrette and serve.
